Questions

What is the pork cutout?

It’s an estimate of what a pork carcass is worth broken down into the cuts packers sell. USDA prices every cut from the day’s negotiated sales, weights each by how much of a typical carcass it makes up, and adds them into a single number per hundredweight of carcass. The six primals (loin, butt, picnic, rib, ham and belly) are built the same way, each per hundredweight of the primal.

What does “FOB plant” mean?

That the price is at the packing plant, before freight. What a buyer pays delivered to their door adds the trucking and whoever distributes it.

What do “combo”, “vacuum-packed” and “1/4-inch trim” mean?

They’re how it’s packed and trimmed: a combo bin is a big container of about 2,000 pounds for processors; vacuum-packed and boxed product is for retail and foodservice; 1/4-inch or 1/8-inch trim is how much outside fat is left. “With added ingredients” is marinated or injected product. USDA’s exact description is on each cut’s page.

Where does the data come from, and when?

From USDA’s National Daily Pork FOB Plant, Negotiated Sales, afternoon report (LM_PK602), which packers are required by law to report. It posts every business day in the middle of the afternoon, Central time. The latest is for Oct 29, 2026; the next is due Fri, Oct 30, 2026.

Why does a cut have no price on some days?

Because nobody bought it on a negotiated deal that day, or too few did for USDA to publish it. Those days are left blank, never counted as zero.

How it works

Copied Oct 30, 2026

The same way as the beef board: the history is USDA’s own, served with no key. At least once a day a GitHub Action reads back the CSVs already published and asks USDA only for the last month or two, then rebuilds this board, a page per cut and the files. A Cloudflare Worker keeps just the newest report, so the top of the page can show the afternoon’s report without waiting for the evening rebuild.
